Alex Sanchez Jr., manager of El Mezcal Mexican Restaurant in Otttawa, is named in a nine-count federal indictment returned Wednesday.

The charges allege Sanchez paid immigrant workers in cash, failed to maintain employment records for them and encouraged them to live in the U.S. for his own financial gain.

He’s also accused of providing housing for the immigrant workers in Ottawa.

The indictment accuses Sanchez of continuing to employ people he knew were in the country illegally despite being fined and ordered in 2011 to cease the alleged violations.

No phone number for Sanchez could be found, and the restaurant’s phone is disconnected.

The government is seeking forfeiture judgment.

Lawsuit filed in Kansas to block science standards

AP) — An anti-evolution group has filed a federal lawsuit to block Kansas from using new, multistate science standards in its public schoolsCourt

Citizens for Objective Public Education argued in the lawsuit filed Thursday that the standards promote atheism and violate students’ and parents’ religious freedoms.

The group had criticized the standards developed by Kansas and 25 other states for treating both evolution and climate change as key scientific concepts to be taught from kindergarten through 12th grade. The Kansas State Board of Education adopted them in June.

The case is the latest chapter in a long-running debate in Kansas over what to teach students about evolution.

The lawsuit argues the new standards will cause Kansas public schools to promote what it calls a “non-theistic religious worldview.”

Update – Grass Fire I-70

4:00pm – Larry Eberle with the Trego County Rural Fire said that the fire was the result of a 2 vehicle accident.  He said a semi truck was heading westbound on I 70.   As the truck went around a curve in the interstate, strong winds pushed the truck into an abandoned car resting on the shoulder of the road.  The semi left the roadway and the fire spread from there.

The resulting blaze quickly spread a mile north across a wheat stubble field, thanks in part to the strong winds.  The fire began spreading into the milo field to the west, but crews quickly contained it in all directions.  Three units form Ellis County Rural Fire and one from Trego County responded.  The semi truck driver was not injured.

3:10pm
– Ellis County Rural Fire crews are leaving the scene.  Trego County firefighters are continuing to monitor the situation to ensure there are no flare ups.

2:25 – The fire in the semi truck seems to be extinguished, and crews are continuing to focus on the grass fire and the car.  Reports are that the semi was off the road and had broken through a fence.

2:10 –  Crews are working to contain the fire.  Crews have been able to head the fire off to the north, and are fighting to prevent the westward spread of the fire through a milo field.

Rural fire crews are responding to a grass fire off I-70 near mile marker 142.   Crews arrived on the scene and immediately called for additional assistance.  A car, semi truck, and a great deal of grass is on fire.  Initial reports are that the fire is burning through wheat stubble and is spreading rapidly.

At this time, a tanker and three trucks from Ellis county are responding to assist Trego county.

LFTB or “Pink Slime” Returning to Schools

SlimeMore than a year after it was banned from school menus, Lean Finely Textured Beef (LFTB) is making its way back into the lunchrooms of schools across the nation.  LFTB, which was given the nickname pink slime, was banned during an investigation to determine if the product posed a health risk to consumers.  USD 489 Food Services Director Jessica Calhoun told Hays Post that the phrase “pink slime” isn’t a good description for LFTB.

“The term pink slime is very negative and it does not really indicate what the product is.  It’s just a different form of beef, a finely textured form of beef.  Still 100% beef.  It goes through the same food safety processes at the plants. It’s very safe to feed to children; it’s safe to feed to everyone.  It has the same quality as regular beef.”

She said that the USDA determines what is and is not safe to serve to students, and though they put LFTB on a ban during the investigation, the USDA has ruled that it is safe.  All beef goes through a sanitation process, and LFTB specifically goes through what Calhoun called “an ammonia puff” to rid it of any bacteria.  While the district isn’t specifically requesting for the filler, it’s possible that beef served in area cafeterias could contain it.

Calhoun said that the district bids out for their meat supply every couple months (which is how the district can control their food costs), and it is possible that the winning vendor could have LFTB in their ground beef.  She added that because of the bid process, staff can be specific about what they expect in a product.  The district does not allow any vendors to supply beef with any extenders, binders, additives, water, or vegetable protein, all of which are added into beef to make it cheaper.  LFTB does not fall into those categories, and according to Calhoun is not a cause for concern as it poses no risk to the health or safety of students.

One step the district takes to ensure the nutritional needs of students is met: utilizing choice bars in the cafeterias.  All schools have fruits and vegetables available without portion restrictions (unlike some foods such as proteins and grains which do have portion restrictions based on calorie range).  Calhoun said her staff is good about knowing which fruits and vegetables students at different schools enjoy so they’re more likely to fill up on healthier options, which is something the district is trying to promote.  She believes the district has been and will continue to be successful in its efforts to balance nutrition and budget.

“Every day we strive to provide the kids with the high quality, nutritious, safe food that we can. And the managers do an excellent job of that at the school levels, as do the other staff. Keeping it within the budget is always a challenge, but with our bidding process it makes it so we can control all of those things to the best that we can.”
