Extension seminar will explore jams and jellies for holiday giving

Homemade foods make thoughtful holiday gifts. But, extra baking and cooking can compound the time crunch of an already busy holiday season.

Gifts of home canned foods are also thoughtful kitchen gifts, but with a big advantage– they can be made weeks or months in advance and then wait patiently on a shelf in a cool, dry place until the holiday season.

Extension food preservation workshops have been popular this fall, and our third canning class focuses on gifts from the kitchen.

On Thursday, Nov. 6th, the Ellis County Extension Council and Golden Prairie Extension District will offer “Homemade for the Holidays: Jams and Jellies for Holiday Giving.”

This hands-on canning workshop will be held from 1 to 5 p.m. at Messiah Lutheran Church, 2000 Main in Hays. A $10 fee is required to cover expenses.

The purpose of this workshop is to help participants learn or review safe techniques for preserving top-quality jams, jellies and sweet spreads. Participants will work together to make jelly from commercial juice, savory jam for a holiday appetizer and a low-sugar freezer jam. Participants will take home at least one product at the conclusion of the workshop.

Instructors are Linda Beech, Ellis County Extension FCS Agent and Tranda Watts, Multi-County Extension Specialist- Food, Nutrition, Health and Safety in Twin Creeks and Golden Prairie Extension Districts.

Pre-register and pay fee by Thursday at the Ellis County Extension Office, 601 Main in Hays, (785) 628-9430. A minimum of 10 people — with a maximum of 15 — is necessary to hold this workshop.

Making homemade sweet spreads is a great way for beginners to learn basic food preservation techniques.

Freezer jams are the easiest — chop or mash clean fresh fruit, then mix with sugar and pectin, and spoon into sterilized containers. The process is also family-friendly so that children can help make gifts to give at the holidays time.

If freezer storage doesn’t suit your gift-giving needs, cooked sweet spreads can be preserved quickly and easily in a boiling water bath canner. The glistening jars of jams and jellies can wait on a shelf in a cool, dry place until needed for gifts.

Food science experts at K-State Research and Extension offer these additional tips for jam and jelly making:

• Follow a recipe from a reliable source or use the instruction insert that comes with canning products. Recipes that are packaged with products such as pectin or jelly jars have been tested by family and consumer science professionals who understand how ingredients in recipes interact. Extension and USDA sources are tested and trustworthy, too. Be cautious of online canning information from sites where recipes are posted by individuals and not verified for accuracy or safety.

• Follow a tested recipe precisely and do not double the batch, or the spreads may not set. Dry powdered pectin and liquid pectin are not interchangeable, so substituting one for the other in recipes may also cause runny jams and jellies.

• Seal all sweet spreads with proper processing in a boiling water bath canner. Old-fashioned treatments such as inverting jars or sealing with a layer of paraffin wax do not stand up to food safety testing and are no longer recommended.

• Use standard canning jars and new, fresh lids for every batch of homemade sweet spreads.

• Add processing time at higher altitudes. Jams and jellies preserved above sea level require longer processing in the boiling water bath canner to ensure safety. Since most Ellis County locations are at an elevation of about 2000 feet, make sure your recipe includes canning instructions for higher altitudes.

Homemade jams and jellies extend fresh-fruit flavors into the fall and winter months. They take relatively little time to prepare, and, when used as gifts, can save time and money and reduce stress during the busy holiday season.

Young girl shot to death in Kansas City drive-by

KANSAS CITY, Kan. (AP) — Kansas City, Kansas, police are investigating the death of a 10-year-old girl in a drive-by shooting.

Police say in a news release that the girl died Sunday evening while she was inside a home that was sprayed by bullets from a passing vehicle.

Police on Monday identified the victim as Machole J. Stewart. Investigators have not said how often she was shot. She died at the scene.

No one else inside the home was injured.

It was the second time in about a week that a young girl died in a drive-by shooting in the Kansas City area. Six-year-old Angel Marie Hooper was shot to death Oct. 17 at a convenience store in Kansas City, Missouri. Police have not arrested a suspect in that case.

Man found shot to death in Junction City

policeJUNCTION CITY, Kan. (AP) — Junction City police are investigating the shooting death of a 27-year-old man.

Police say in a news release that Elza Evans was found dead in a parking lot early Saturday. He had been shot several times.

Lt. Jeff Childs said in the release that police are asking anyone with information about the death to contact the police department or Crime Stoppers.

 

Giants beat Royals 5-0 for 3-2 World Series lead

SAN FRANCISCO (AP) – Madison Bumgarner smothered the Kansas City Royals for the second time in a week, pitching a four-hitter that led the San Francisco Giants to a 5-0 victory Sunday night and a 3-2 World Series lead.

Bumgarner struck out eight and walked none in improving to 4-0 in four World Series starts. He has allowed one run in 31 Series innings, an astonishing 0.29 ERA.

Brandon Crawford drove in three runs and Juan Perez hit a two-run double for the Giants, seeking to become only the second NL team to win three titles in a five-year span.

James Shields lost to Bumgarner for the second time, allowing eight hits and two runs in six innings.

In the 41 previous instances the World Series was 2-2 in the best-of-seven format, the Game 5 winner has taken the title 27 times. After a day off, the Series resumes Tuesday night at Kansas City’s Kauffman Stadium. In a rematch of Game 2 starters, Jordano Ventura pitches for the Royals and Jake Peavy for the Giants.

TMP-Marian volleyball No. 7 seed at 4A Division II state tournament

The TMP-Marian volleyball team is the No. 7 seed at the 4A Division II state tournament in Salina and will face Holcomb, Baldwin and Royal Valley in pool play Friday.

4A Division II pairings

The Monarchs (22-14) play Holcomb (29-7) to open pool play then take on Baldwin (27-11) at 11:30am. They close out pool play against Holt-Royal Valley (23-14) at 12:30pm.

The top two teams from each pool advance to Saturday’s semifinals.

The Monarchs defeated Larned and Smoky Valley this past Saturday at the Larned regional to advance.

Antonino church’s fall feast is scheduled for Sunday

ANTONINO — Our Lady Help of Christians in Antonino Fall Feast is scheduled for Sunday, Nov. 2 from 4 to 7 p.m.

The all-homemade menu includes roast beef, galuskies, dressing, mashed potatoes and gravy, corn, green beans, and dessert.

Tickets are $10 for adults and $5 for children 5 to 10 $5. Children 4 and younger are free.

The church is located five miles south of Hays on U.S. 183 then 3 miles west on Antonino Road.

Prospects dim on settlement for all wheat claims

court WICHITA, Kan. (AP) — Prospects are dimming for a settlement on remaining claims in lawsuits over the May 2013 discovery of genetically engineered Monsanto wheat in an Oregon field.

A joint status report submitted Friday in U.S. District Court in Kansas said no agreement has been reached in the lawsuits filed by non-soft white wheat plaintiffs against St. Louis-based Monsanto Co. The lawsuits from across the country have been consolidated in Kansas.

Growers of soft white wheat who sued apparently have reached a tentative deal with the company.

The report said the remaining parties will continue to discuss an amicable resolution, but do not believe any agreement will be reached soon.

The parties suggested the court vacate its earlier order staying proceedings. Monsanto has filed several pending motions seeking to dismiss the cases.

5989098070_41f38d34b9_mLONDON (AP) – Eric Clapton says Cream singer-bassist Jack Bruce was “a great musician and composer, and a tremendous inspiration.”

Drummer Ginger Baker says he’s very sad to learn of the loss of a fine man.

Bruce died Saturday of liver disease at his home in Suffolk, England, at the age of 71.

Bruce wrote many of Cream’s hits, including “Sunshine of Your Love,” “White Room” and “I Feel Free.” Cream sold 35 million albums in just over two years.

Black Sabbath guitarist Tony Iommi calls Bruce his favorite bass player and greatest influence.

Romney, Dole campaigning with Kansas Sen. Roberts

OVERLAND PARK, Kan. (AP) — Former Republican presidential nominee Mitt Romney is joining fellow ex-nominee Bob Dole in the GOP’s efforts in Kansas to rescue U.S. Sen. Pat Roberts’ re-election.

Both Romney and Dole were joining Roberts on Monday at an Overland Park restaurant and banquet hall for a campaign rally. Kansas is a GOP-leaning state, but the race between Roberts and independent candidate Greg Orman appears to be a toss-up.

They’re appearing in Johnson County, the state’s most populous county and home to 22 percent of the state’s 1.74 million voters. It’s normally a Republican stronghold, but Orman is an Olathe businessman and expects to do well there.

Romney captured 58 percent of the vote in the county when he ran for president in 2012. Dole did, too, when he ran in 1996.

 

Hospital: Teen wounded in school shooting dies

MARYSVILLE, Wash. (AP) — One of the teenagers wounded in a Washington state high school shooting has died, raising the number of fatalities from when a student opened fire in a cafeteria to three.

Officials at Providence Regional Medical Center Everett said 14-year-old Gia Soriano died Sunday night. Another girl was killed during the shooting Friday by a popular freshman at Marysville-Pilchuck High School north of Seattle. The shooter, Jaylen Fryberg, died of a self-inflicted wound.

Three other students remain hospitalized, two in critical condition and one in serious condition.

Parents and students gathered in a gymnasium at the school Sunday afternoon for a community meeting, with speakers urging support and prayers and tribal members playing drums and singing songs. Fryberg was from a prominent Tulalip Indian family.
