Although plans are a bit behind schedule, work at a new Hays restaurant is closer to completion.

Peter Mandy’s is located at 3402 Vine — the former K’s Diner — and will offer a nontraditional blend of Greek and Italian cuisine.

Owner George Plaku said Wednesday that contractors are continuing to put the finishing touches on the restaurant, and new equipment is still arriving.

Contractor were installing signage Tuesday, as well, although the portions of that work were forced to be delayed due to the wind.

Plaku, who comes to Hays from Lincoln, Neb., said a “soft opening” will be scheduled later this summer.
